- 6 eggs
- 1/3 cup butter beans (drained)
- 1.5 tbsp mayonnaise
- 1/2 tsp turmeric
- 1/3 cup grated carrot
- 1/3 cup finely chopped celery
- Salt & Pepper
- Boil eggs, then peel.
- Cut eggs longways in halves and scoop out the yolks.
- Mix yolks with beans, turmeric, salt & pepper, mayonnaise & blend or mash well.
- Add carrot & celery & mix together.
- Put yolk mixture back into hollows of the egg whites & put in fridge for at least 30 minutes.
- Enjoy as a vitamin packed snack.
